Classic Quiche with Cheese and Ham

Try making the pie dough from scratch, it's not as hard as you think!  If you don't like ham in the filling, then you may substitute anything else, such as broccoli, spinach or mushrooms.
(Serves 6)

Ingredients:
Pie crust for 9 - 10 inch pie dish:
1 1/2 cups all-purpose flour
1/4 teaspoon salt
4 tablespoons cold butter, cut into 1/2 inch cubes
4 tablespoons shortening, cut into 1/2 inch cubes
4 - 5 tablespoons iced water

Filling:
3 large eggs
1 1/2 cups light cream or half and half
1/2 teaspoon salt
Black pepper to taste
1 cup grated cheddar cheese
1/2 cup diced ham

Directions:

  1. Preheat oven to 425 degrees Fahrenheit.

  2. Place flour and salt in a large mixing bowl.   

  3. Add butter and shortening,  then using fingertips, rub into the flour until the mixture resembles
    breadcrumbs or peas.

  4. Add the water and stir together with fork, then squeeze it together until the mixture forms a ball.

  5. Pull  pieces of the dough from the ball and press them over the bottom and sides of the pie dish, using the heel of your hand.

  6. Cover the lined dish with foil, pushing it gently against the dough.

  7. Bake for 12 minutes, carefully remove the foil and bake for another 5 minutes.  Set aside on a baking pan.

  8. Lower the oven temperature to 375 degrees Fahrenheit.

  9. Whisk together the eggs, cream, salt and pepper in a large bowl.

  10. Sprinkle the cheese and ham over the bottom of the pie shell.

  11. Pour the egg custard mixture over and bake for 30 - 35 minutes or until golden brown and just set. 

  12. Transfer quiche to wire rack to cool.
