BLT (Bacon, Lettuce, Tomato) Salad
This delicious salad tastes just like a BLT sandwich without the bread!
(Serves 4)

                   

Ingredients:
8 slices bacon
2 small heads Romaine lettuce or 
1 head Iceberg lettuce
2 medium tomatoes
1 cup croutons

Dressing:
1/2 cup mayonnaise
3 tablespoons milk
1 tablespoon green onion, chopped
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/2 teaspoon sugar
Salt and pepper to taste

Directions:

  1. Fry the bacon slices in a large skillet over medium high heat until crisp.  Transfer cooked bacon to paper towels to drain and cool.
  2. Wash and dry the lettuce, then chop or tear into bite sized pieces.  Place in large mixing or salad bowl.
  3. Cut the tomatoes in 1/2 inch dice.  Add to the lettuce.
  4. Crumble the cooled bacon slices and add to the salad bowl.  Toss lightly.
  5. Make the dressing: In a small bowl, whisk together the mayonnaise, milk, green onion, mustard, lemon juice and sugar.  Season with salt and pepper to taste.
  6. Add dressing to the salad and toss to coat.
  7. Sprinkle over the croutons and serve immediately.
